Ingredients

500 g squid , cleaned hoods only
1/2 teaspoon cracked black pepper
1 teaspoon sea salt
1/2 teaspoon lemon pepper seasoning
1 tablespoon peanut oil
1 lebanese cucumber , sliced thinly ( about 130 grams )
2 green onions , sliced thinly ( also known as spring onions )
250 g cherry tomatoes , halved
1/3 cup roasted peanuts , chopped coarsely
1/2 cup fresh mint leaves , loosely packed
1 tablespoon red wine vinegar
1 tablespoon peanut oil

Instructions

1.In a mixing bowl, mix together black pepper, sea salt, and lemon pepper seasoning.
2.Add cleaned squid and toss together ensuring the squid is well coated in the seasoning mix.
3.In a frying pan, heat peanut oil and add the squid. Fry for about 3 minutes or until the squid turns golden brown. Remove from heat and set aside.
4.In another mixing bowl, mix together cucumber slices, cherry tomatoes, green onions, roasted peanuts, fresh mint leaves, red wine vinegar, and peanut oil.
5.Serve squid with cucumber salad on the side.
