2 1/4 cups self raising flour
1/2 cup vegetable oil , extra
2 eggs , lightly beaten
2 tablespoons lemon juice
2 tablespoons fresh coriander leaves , chopped ( cilantro )

Instructions

1.Preheat oven to 180°C (360°F) and line a muffin tray with paper liners.

7.Fold the chicken and onion mixture into the batter. Then, fold in the coriander leaves.
8.Fill the muffin liners 3/4 full with the batter.
9.Bake for 20-25 minutes or until the muffins are golden brown and cooked through.
