150 g ciabatta , thickly sliced
40 g butter , softened
100 g ricotta cheese
100 g sun-dried tomatoes , coarsely chopped
2 tablespoons fresh basil , shredded
500 ml milk
2 eggs
40 g parmesan cheese , grated

Instructions

1.Preheat the oven to 180°C/350°F/Gas 4.

4.Pour the mixture over the ciabatta slices and leave to stand for 10 minutes until the bread has soaked up all the liquid.
5.Place the ramekins on a baking sheet and bake in the oven for 20-25 minutes until the puddings are puffed up and golden brown.
6.Serve with a generous scattering of fresh basil leaves on top.
