Ingredients

1/4 cup lime juice , fresh
2 teaspoons paprika
1 garlic clove , crushed
2 boneless skinless chicken breasts
1 cup pearl barley
olive oil flavored cooking spray
1 1/2 cups fresh corn kernels ( see intro )
1 small red capsicum , halved , deseeded , finely chopped
4 green onions , ends trimmed , thinly sliced
1/2 cup Italian parsley
Lime-Spiced Chicken With Pearl Barley and Corn Salad is a flavor-packed and colorful dish that can be enjoyed for a variety of occasions. Instructions

1.In a small bowl, mix together the lime juice, paprika and garlic. Put the chicken breasts in a shallow dish and pour over the marinade, turning to coat them. Cover and chill for at least 30 minutes or up to 12 hours.
2.Rinse the pearl barley under plenty of cold running water, then put it in a large pan of boiling water with a pinch of salt. Cover and simmer for 30 minutes or until tender and the water has been absorbed. Set aside to cool.
3.Preheat the grill to high. Spray the corn kernels and red capsicum with olive oil and grill for 4-5 minutes or until golden brown.
4.Grill the chicken for 5-6 minutes each side or until cooked through. Set aside to cool slightly before slicing.
5.In a large bowl, mix together the pearl barley, corn, capsicum and green onions. Toss through some Italian parsley.
6.Serve chicken on top of barley salad.
