Ingredients

1 can crushed pineapple in juice
1 cup dried apricot , chopped
3 eggs
1/8 cup poppy seed
3/4 cup oil
4 cups self raising flour
2 teaspoons cinnamon
1 cup brown sugar
3 large bananas , ripe
Jan's Pineapple and Banana Cake is a delicious and easy-to-make cake that is perfect for OAMC. The cake is loaded with sweet, juicy pineapple, ripe bananas and chewy apricots. This combination creates a texture that is dense and moist, making it perfect for afternoon tea. Instructions

1.Preheat the oven to 180°C. Grease two 20cm diameter cake tins.
2.In a large mixing bowl, combine the crushed pineapple, chopped dried apricots, eggs, poppy seeds and oil.
3.Stir in the self raising flour, cinnamon and brown sugar. Mix well.
4.Peel and mash the ripe bananas. Add them to the batter and mix until just combined.
5.Pour the batter into the prepared cake tins and spread evenly.
6.Bake for 35-40 minutes or until golden brown and a toothpick inserted into the centre comes out clean.
7.Allow the cakes to cool in the tins for 5 minutes before turning them out onto wire racks.
8.Cool the cakes completely before storing in an airtight container for OAMC.

PROS

The combination of pineapple, banana and apricot makes this cake incredibly moist and flavourful.

It can be made ahead and stored in the freezer, making it a great OAMC recipe.

CONS

The cake can be quite sweet, which may not be to everyone’s taste.
