Ingredients

1/4 cup quick-cooking oats
1/2 cup apricot nectar
1/8 cup dried fruit , chopped ( I used a mixture of apricots & raisins )
1 teaspoon lemon rind , finely grated
vanilla yogurt , to serve

Instructions

1.In a small saucepan, bring 1/2 cup of water to a boil.
2.Add the quick-cooking oats to the pan and continue to cook, stirring occasionally, for 1-2 minutes, or until thickened.
3.Pour in the apricot nectar and stir to combine.
4.Add chopped dried fruit and lemon rind to the oatmeal and stir.
5.Continue to cook the oatmeal for another minute or two, stirring frequently, until the fruit is plump and the oatmeal is thick and creamy.
6.Remove the pan from the heat and transfer the oatmeal to a bowl.
7.Top with vanilla yogurt and enjoy!
