Ingredients

100 ml strong oxfam fair coffee
75 ml sherry wine ( Pedro Ximinez prefered )
4 egg yolks
2 tablespoons sugar
2 egg whites
2 cups marcapone cheese
30 small ladyfingers ( savoiardi cookies prefered )
90 g bittersweet chocolate , grated
75 g milk chocolate , grated

Instructions

1.In a bowl, combine coffee with sherry.

4.In another bowl, beat egg whites until they hold stiff peaks.
5.Gently fold in the egg whites into the mascarpone mixture.
6.Dip each ladyfinger into coffee mixture briefly, then place them in a single layer in a 9-inch dish until the bottom is covered.
7.Set 1/3 of the grated chocolate aside and sprinkle 1/3 of the remaining grated chocolate over the ladyfingers.
8.Repeat with another layer of coffee-dipped ladyfingers and grated chocolate until all ladyfingers and grated chocolate have been used.
9.Cover and refrigerate for at least 2 hours before serving. Enjoy!
