1/4 cup coriander , chopped
100 g cornstarch
3 eggs , lightly beaten

vegetable oil , as needed , enough for shallow frying
1/2 cup plain yogurt , to serve
200 g marinated goat-milk feta , drained and crumbled
1/4 cup olive oil
750 g red Spanish onions , thinly sliced

Instructions

1.In a large bowl, combine the grated carrots, grated sweet potatoes, sliced green onions, ground coriander, ground cumin, chopped coriander, cornstarch, eggs, and salt and pepper. Mix well.
2.Heat enough vegetable oil in a large frying pan for shallow frying.
3.Using a 1/4 cup measure, scoop the mixture and flatten it into a fritter. Carefully lower it into the hot oil. Repeat with the remaining mixture.
4.Cook the fritters for 2-3 minutes until golden brown. Flip and cook for another 2-3 minutes on the other side. Remove from the pan and drain on paper towels.
5.In a separate pan, heat the olive oil over low-medium heat. Add the thinly sliced Spanish onions and cook slowly, stirring occasionally, until they have caramelised.
6.Serve the fritters with the caramelised onions, crumbled goat-milk feta and plain yogurt, as desired.
