Ingredients

3 medium eggs
1/2 teaspoon Tabasco sauce
1 medium potato
1 medium onion
1 medium tomatoes , coarsely diced
50 g pepperoni , thinly sliced
50 g tasty cheese , grated
1/4 teaspoon ground black pepper

Instructions

1.In a small bowl, beat the eggs and Tabasco sauce together.
2.In a large skillet, heat the oil over medium-high heat. Add the potato and onion and sauté for 5 minutes or until tender.
3.Add the tomato and pepperoni and sauté for a further 2 minutes.
4.Pour the egg mixture over the top of the vegetables and cook for 2-3 minutes or until set.
5.Sprinkle with cheese and black pepper.
