80 ml red wine
1 tablespoon mango and ginger chutney , plus

60 ml water
300 g egg mayonnaise
1 tablespoon fresh coriander , chopped , plus
extra coriander , to serve
100 ml thickened cream
1 kg chicken meat , cooked and shredded
lettuce , to serve
2 tablespoons almonds , toasted and finely chopped

Instructions

1.Heat vegetable oil in a saucepan and add the chopped onion. Saute until the onions are soft and translucent.

3.Pour in red wine, mango and ginger chutney, lemon juice, and water, then stir well.
4.Add egg mayonnaise, chopped coriander, and thickened cream to the saucepan and mix until well combined.
5.Toss the cooked and shredded chicken into the coronation sauce and stir until fully coated.
6.Serve the coronation chicken on a bed of lettuce and top with toasted almonds and extra mango and ginger chutney, if desired.
