Ingredients

3/4 cup desiccated coconut
1 cup rolled quinoa ( rolled quinoa flakes )
3/4 cup gluten-free blended flour ( I use Orgran brand )
1 cup gluten-free rice bubbles ( I used Freedom Foods Rice Puffs )
1/2 cup sorghum flour or 1/2 cup soy flour
3/4 cup sugar
1/8 cup brown sugar
200 g butter
1 1/2 tablespoons golden syrup
2 teaspoons bicarbonate of soda
4 tablespoons boiling water
Anzac Biscuits are an Australian and New Zealand classic, typically served on Anzac Day to commemorate the members of the Australian and New Zealand Army Corps who fought in the First World War. These biscuits were popular among soldiers due to their long shelf life and the fact that they did not spoil easily. This recipe puts a healthy twist on the traditional Anzac Biscuit by using gluten-free flours and coconut instead of wheat and oats. Instructions

1.Preheat the oven to 160°C and line a tray with baking paper.
2.In a large bowl, combine the desiccated coconut, rolled quinoa, gluten-free blended flour, gluten-free rice bubbles and sorghum flour.
3.In a separate saucepan, heat the sugar, brown sugar, butter and golden syrup over medium heat until it melts and is well combined.
4.In a small bowl, mix the bicarbonate of soda and boiling water until dissolved.
5.Pour the bicarbonate of soda mixture into the sugar mixture and stir to combine.
6.Add the wet mixture to the dry ingredients and stir until well combined.
7.Roll tablespoon-sized balls of the mixture and place them on the lined tray, spaced apart.
8.Bake for 15-20 minutes or until golden brown.
9.Allow to cool on the tray for 5 minutes before transferring to a wire rack to cool completely.
