2 cups self-raising flour
1 teaspoon bicarbonate of soda

1/4 cup caster sugar
125 g butter , chopped into small pieces
1/2 cup honey
1/4 cup demerara sugar

Instructions

1.Preheat oven to 180°C.
2.In a large mixing bowl, sift flour, bicarbonate of soda, mixed spice and ginger.
3.Add caster sugar.

5.Add honey and mix well until the dough is formed.
6.Make small balls and roll each ball in demerara sugar before placing on a baking tray.
7.Bake for 12-15 minutes until lightly golden.
