Ingredients

2 tablespoons oil ( divided )
2 onions , slice fine
1 tablespoon brown sugar
1 tablespoon balsamic vinegar
1 cup arborio rice
2 1/2 cups chicken stock , boiling ( divided )
25 g butter
1 cup grated parmesan cheese
100 g mozzarella cheese , cut into small cubes
extra parmesan cheese

Instructions

1.In a large pan, heat 1 tablespoon of oil over medium heat.
2.Add the sliced onions and cook for 5-7 minutes until softened.
3.Reduce heat to low and add the brown sugar and balsamic vinegar to the onions.
4.Cook for an additional 10 minutes, stirring occasionally until caramelised.
5.Meanwhile, in a separate pot, heat the remaining tablespoon of oil over medium heat.
6.Add the arborio rice to the pot and cook for 1-2 minutes until coated in oil.
7.Gradually add the boiling chicken stock to the rice, one cup at a time, stirring constantly until the liquid is absorbed and the rice is cooked through. This should take approximately 25 minutes.
8.Once the rice is cooked, remove it from heat and stir in the butter and grated parmesan cheese.
9.Preheat a grill to high.
10.Fold the caramelised onions and mozzarella cheese cubes into the cooked rice.
11.Form the rice mixture into cakes and place them on a lined baking tray.
12.Sprinkle extra parmesan cheese over the top.
13.Grill the rice cakes for 2-3 minutes until golden brown.
14.Serve hot and enjoy!
