Ingredients

2 cloves garlic
1/2 cup chicken stock
250 g polenta ( cornmeal )
4 cups cold water

100 g freshly grated parmesan cheese
1 cup breadcrumbs
2 eggs
1/2 cup milk
1/2 cup flour
6 cups vegetable oil

Instructions

1.Preheat your oven to 200C (400F).
2.In a large pot, bring the chicken stock and garlic cloves to a boil over high heat.
3.Reduce heat to medium and slowly pour in the polenta, stirring constantly.
4.Continue to stir until the polenta is cooked and thickened, about 5-7 minutes.
5.Remove the garlic cloves and stir in the grated parmesan cheese and salt.
6.Pour the polenta onto a greased baking sheet and smooth out to an even layer.
7.Allow the polenta to cool and set, about 1 hour.
8.Once the polenta has set, cut it into thin rectangular shapes (chips).
9.Prepare 3 bowls; one with breadcrumbs, one with beaten eggs and milk, and one with flour.
10.Coat the chips first in flour, then in the egg and milk mixtures, and finally in the breadcrumbs, making sure each chip is well coated.
11.Heat the vegetable oil in a deep frying pan over medium-high heat.
12.Once the oil is hot, carefully add the chips and fry until golden brown.
13.Remove from the oil and place on a paper towel to remove excess oil.
14.Serve the crispy Polenta chips with your favorite dipping sauce.
