1/2 cup wholemeal self-rising flour
1/2 cup self-rising flour
2/3 cup polenta
2 tablespoons fresh chives , snipped
2 tablespoons fresh parsley , chopped
1/2 cup red capsicum , chopped ( Bell Pepper )
250 g sweet potatoes , peeled & grated
1 egg
1 cup low-fat milk

Instructions

1.Preheat oven to 180°C/160°C fan-forced. Grease and flour a 12 hole (1/3-cup capacity) muffin pan.
2.Sift both flours and polenta into a large bowl. Stir in the chives, parsley and capsicum. Add grated sweet potato and stir to combine.
3.Whisk together egg and milk. Add to the flour mixture and stir until just combined.
4.Spoon mixture into the muffin holes. Bake in oven for 22 to 25 minutes or until a skewer inserted into the centre comes out clean.
5.Cool in pan for 5 minutes before transferring to a wire rack to cool completely.
