Ingredients

6 egg whites
1 1/4 cups caster sugar
3 large ripe mangoes
2 tablespoons Grand Marnier
1 1/4 cups thickened cream

Instructions

1.Preheat the oven to 120C fan-forced. Line a baking tray with baking paper.

3.Spoon the meringue onto the prepared tray and use the back of a spoon to make an indentation in the centre.
4.Bake for 1 hour or until the meringue is crisp on the outside and soft in the middle.
5.Meanwhile, peel 2 mangoes and cut the flesh into thin slices. Cut the remaining mango into small dice and place in a bowl with the Grand Marnier. Add the sliced mango to the bowl and toss gently to combine.
6.Beat the cream until soft peaks form.
7.Once the meringue is cooked, remove from the oven and allow to cool completely.
8.Spoon the whipped cream onto the meringue, followed by the mango mixture. Serve immediately.
