Damper is a type of bread that originated in Australia, traditionally cooked over a campfire or hot coals. It was a staple food for drovers and other travelers in the Outback, and was often made with simple ingredients like flour, water, and a pinch of salt. This Spiced Apple Damper puts a sweet spin on the classic recipe, and is perfect for breakfast or as a warm snack throughout the day. It has a tender crumb and a slightly crunchy crust, and is best enjoyed warm with a slather of cream cheese and a drizzle of maple syrup on top.

Instructions

1.Preheat the oven to 200°C/390°F. Line a baking tray with parchment paper and dust with flour.
2.In a large bowl, mix together the self-raising flour, mixed spice, and brown sugar. Add the chilled, cubed butter and rub the mixture together with your fingertips until it resembles breadcrumbs.
3.Add the grated apples and 1 cup of milk, then use a spoon or your hands to mix the dough together. If the mixture is too dry, gradually add more milk until it comes together.
4.Turn the dough out onto a lightly floured surface and knead it for a few minutes until it is smooth and well-combined.
5.Shape the dough into a round, then place it on the prepared baking tray. Use a sharp knife to score a cross on the top of the dough, then brush it with the egg white and sprinkle on the demerara sugar.
6.Bake the damper for 30-40 minutes, or until it is golden brown and sounds hollow when tapped on the bottom.
7.Serve warm with cream cheese and maple syrup.
