1/2 cup icing sugar ( confectioners sugar )
125 g butter , chopped
60 g butter
1/2 cup white sugar
2 teaspoons vanilla essence
1 1/2 tablespoons milk
1 3/4 cups mixed dried fruit
3/4 cup slivered almonds

Instructions

1.Preheat oven to 180°C/ 350°F. Grease and line a 22cm x 32cm / 9 x 13 in baking pan.
2.Sift flours and icing sugar into a bowl. Rub in chopped butter until mixture resembles breadcrumbs.
3.Press 2/3 of the mixture evenly over the base of the pan. Bake for 15 minutes or until light golden.
4.Cook up the remaining butter and sugar in a pan over medium heat for about 2 minutes. Stir in vanilla essence and milk. Fold in mixed dried fruits and almonds.
5.Spread mixture over base. Sprinkle with remaining crumb mixture.
6.Bake for 20 minutes or until golden. Cool and serve after slicing into bars.
