Hopel-Popel is an egg-based dish with origins in Eastern Europe. The name comes from the Yiddish word 'hoppel-poppel' which means 'mishmash' or 'jumble' of ingredients. It was traditionally a dish made by farmers using leftovers from their gardens and farm animals. Today, it has evolved into a popular breakfast or brunch dish enjoyed worldwide. The hearty and flavorful combination of eggs, potatoes, bacon, and cheese makes it a great option for those looking for a filling and satisfying meal to start their day. Customize it with your favorite ingredients or enjoy it as is for a classic, no-fuss breakfast dish.

Instructions

1.Heat oil in a frying pan on medium heat. Add mushrooms and cook until browned and tender.
2.Add bacon, onion, and garlic to the pan and cook until the bacon is crispy and the onions are translucent.
3.Add in the diced potatoes and mix well with the other ingredients.
4.Whisk the eggs in a separate bowl with thyme, salt, and pepper. Pour the egg mixture into the frying pan, mix it well with the rest of the ingredients. Cover the pan with a lid and cook for 5-7 minutes or until the eggs are set.
5.Remove the lid and sprinkle with grated cheese on top. Cover the pan again for 2-3 minutes to melt the cheese. Serve hot.
