Ingredients

220 g good-quality dark chocolate
125 g unsalted butter
4 eggs
1 cup caster sugar
1 tablespoon Frangelico or 1 tablespoon Amaretto
1/2 cup plain flour
1/2 teaspoon baking powder
1/2 cup good-quality cocoa powder
125 g good-quality white chocolate ( or dark chocolate )
3/4 cup light cream

Instructions

1.Preheat oven to 160C (320F).
2.Combine dark chocolate and butter in a heatproof bowl set over a pan of simmering water. Melt, stirring constantly, until smooth.
3.In a large mixing bowl, whisk eggs and sugar until light and fluffy.
4.Gradually whisk in the melted chocolate until mixture is well combined.
5.Add Frangelico or Amaretto, flour, baking powder, and cocoa powder. Mix until well combined.
6.Roughly chop white chocolate and gently fold through mixture.
7.Spoon mixture evenly into 6-8 ramekins or ovenproof dishes. Place dishes in a baking tray and pour in enough hot water to come halfway up the sides of the dishes.
8.Bake for 20-25 minutes or until the tops of the puddings are firm and a skewer inserted into the center comes out with moist crumbs on it.
9.Remove from oven and allow to cool slightly. To make the chocolate sauce, heat light cream in a small saucepan until just simmering. Remove from heat and add in chopped dark chocolate. Stir until chocolate has melted and mixture is smooth.
10.Serve the warm brownie puddings drizzled with chocolate sauce and topped with a scoop of vanilla ice cream, if desired.
