Ingredients

1 large onions or 2 medium onions
2 heads garlic
8 -12 lamb cutlets
olive oil
10 okra or 10 ladyfingers
tamarind paste
250 ml chicken stock or 250 ml vegetable stock
3 tablespoons tomato puree
chopped parsley
Barmia is a popular Libyan dish made of lamb cutlets and okra cooked in a spicy and sour sauce. The tamarind paste is used to give the dish its tanginess, while the spices used add an array of flavors to the dish. This hearty dish is perfect served with plain rice or couscous. The combination of the lamb, okra, and sauce is a fantastic way to enjoy different flavors and spices in one dish.

Instructions

1.Preheat the oven to 180°C/350°F.
2.Cut the onions in half and slice them. Peel the garlic and slice them too
3.Heat olive oil in a large frying pan over medium heat and fry the lamb cutlets in batches until browned. Then, remove it from the pan and set aside.
4.Add more oil to the pan and toss in the okra, frying for about 5 minutes. Remove it from the pan and set aside as well.
5.Reduce the heat, add the onion and garlic and let them cook for 5-6 minutes until translucent.
6.Add the tamarind paste, tomato puree and chicken stock to the pan and stir together. Cook for 2-3 minutes.
7.Return the lamb cutlets to the pan and bring to a simmer. Then, transfer the pan into the oven for 15 minutes.
8.Remove the pan from the oven and add in the okra. Return to the oven and cook for another 15-20 minutes.
9.The Barmia is ready to serve, sprinkle the chopped parsley over the dish before serving.

This dish is moderately high in calories and fat.
As well, the dish may not appeal to everyone due to the taste of the spices and tamarind paste.
