Ingredients

1 can spinach , chopped
1 can black-eyed peas , drained
1 large onion , chopped
1/4 cup fresh dill , finely chopped
1/4 cup purslane , finely chopped
1/2 teaspoon ground cumin
1/2 teaspoon ground coriander
1 tablespoon dried limes , ground
1 1/2 tablespoons tomato paste
1/4 cup textured vegetable protein , soaked ( texturized vegetable protein )
salt
1/4 cup cilantro , chopped ( optional )
1/4 cup fresh parsley , chopped ( optional )
This vegetarian-vegan Spinach Stew is a more healthy version of a stew. Vegetables, fruit, spices, and herbs steal the show and are satisfying and tasty enough to turn even the pickiest of eaters into a fan. Instructions

1.Open both cans, drain the black-eyed peas, and chop the spinach. Set these ingredients aside for later use.
2.Peel and chop the large onion, rinse and finely chop the fresh dill, and remove the leaves of the purslane. Set these ingredients aside as well.
3.In a large saucepan, heat up some vegetable oil over low to medium heat. Add the chopped onions and fry until they soften and turn golden and translucent in color.
4.Add the chopped purslane, dill, and all the spices into the saucepan, then stir together to combine. Cook for a few minuets stirring occasionally.
5.Add textured vegetable protein and stir.
6.Add the spinach and tomato paste to the saucepan, then mix together with the ingredients in the saucepan.
7.Add the drained black-eyed peas, give everything one last stir and let it simmer for 5 minutes until bubbling hot. You can add water or vegetable brooth if you want the stew to be more liquid.
8.Take out your serving bowls and ladle out your Spinach Stew With Rice, garnish with chopped cilantro and/or fresh parsely if you like.
