1 cup white rice
1 medium onion , diced
2 tablespoons oil
1 - 1 1/2 teaspoon salt
1/2 - 1 tablespoon curry
1 teaspoon cinnamon
1/2 tablespoon salt
3 tablespoons oil

Instructions

1.Preheat the oven to 350°F.
2.Heat 2 tablespoons of oil in a frying pan over medium heat. Add onions and cook for five minutes, or until they become soft and golden. Add diced carrots and cook for another five minutes, until slightly softened.
3.Stir in one teaspoon of salt, cinnamon, and curry, and combine well. Set the mixture aside.
4.Combine rice, three tablespoons of oil, and 1/2 tablespoon of salt in a separate bowl. Mix well. Take a baking dish and put one layer of rice on the bottom. Then add a layer of the carrot mixture, and continue to alternate the layers until all the ingredients are used up. Press the layers down with a spoon.
5.Pour enough water over the top to cover the rice and vegetables. Cover the dish with foil and place in the oven. Bake for one hour or until the rice is cooked and has absorbed the water.
6.After an hour, remove the foil and return the dish to the oven. Bake for another ten to fifteen minutes, until the top is golden brown and crispy.
7.Remove from the oven and serve hot!
