Ingredients

5 -6 cups plain flour
1 envelope active dry yeast
2 cups water
2 teaspoons sugar
2 teaspoons salt
2 tablespoons oil
1 large onion , finely chopped
2 tablespoons oil
2 cloves garlic , finely chopped
500 g finely ground lamb
1 1/2 cups tomatoes , chopped and peeled
1 1/2 cups zucchini , grated
2 tablespoons chopped parsley
1/2 teaspoon dried thyme
1 small chili , seeded and finely chopped
salt
fresh ground black pepper
Laham Ajeen, also known as Sfeeha, is a popular Middle Eastern dish that originated in Lebanon. It consists of a thinly rolled dough, topped with spiced ground lamb meat, tomatoes and zucchinis. The meat mixture is infused with aromatic spices such as thyme, parsley and chili peppers, giving it a unique flavor profile. Instructions

1.In a large mixing bowl, add 5 cups of flour, yeast, sugar, salt and 2 tablespoons of oil.
2.Gradually add 2 cups of warm water, stirring until the mixture forms a smooth dough.
3.Knead the dough on a floured surface until it is firm and elastic.
4.Cover with a damp cloth and allow the dough to rise in a warm place for at least an hour.
5.In a separate skillet, saute onions and garlic on medium heat until soft.
6.Add the finely ground lamb and cook until browned.
7.Add the chopped tomatoes, grated zucchini, parsley, thyme, chili, salt and black pepper. Simmer until the mixture thickens.
8.Preheat your oven to 450°F.
9.Divide the dough into 24 equal portions and roll each out to form a circle.
10.Place the dough circles on a greased baking sheet and spread the lamb mixture on top, leaving a 1 cm border around the edges.
11.Bake for 10-15 minutes or until the Laham Ajeen is crispy and golden brown.
