Ingredients

3 ounces dried tamarind
2 cups water
1 cup chopped pitted dates
1 teaspoon sugar
1/2 teaspoon salt
1/2 teaspoon ground cumin
1/8 teaspoon cayenne pepper

Instructions

1.Soak the tamarind in 2 cups of warm water for half an hour.
2.Once the tamarind is soft, mash it with your hands.
3.Strain the tamarind pulp using a sieve and discard the seeds and fibers.
4.In a blender, add the tamarind pulp, 1 cup of chopped dates, 1 teaspoon of sugar, 1/2 teaspoon of salt, 1/2 teaspoon of ground cumin, and 1/8 teaspoon of cayenne pepper.
5.Blend the mixture until it becomes smooth.
6.If you want a thinner consistency, add some water and blend again.
7.Store the chutney in an airtight container in the refrigerator for up to a month.
