Ingredients

1/2 kg beef mince or 1/2 kg mutton mince
1/2 kg bitter melon
salt ( to taste )
1/2 cup oil
2 onions
2 teaspoons ginger-garlic paste
1/4 teaspoon turmeric
1 teaspoon ground coriander
2 teaspoons red chili powder
1 teaspoon cumin powder
1 teaspoon garam masala powder
2 chopped tomatoes
4 green chilies
4 tablespoons tamarind pulp
2 tablespoons fresh coriander
Keema Bhare Karela, also known as Stuffed Bitter Gourd, is a popular dish in Pakistan and India. Bitter melon, also known as bitter gourd, is a vegetable with a very bitter taste. It is not typically enjoyed by many people, but this dish is an excellent way to enjoy the vegetable's benefits while masking its distinct flavor. Instructions

1.Cut off the top and bottom ends of the bitter melon and scrape out the seeds. Slice it into thin rounds.
2.Rub salt over them and leave for 30 minutes. Then, wash off salt and squeeze out the liquid. Set aside.
3.In a large pot, heat oil and sauté onions until translucent.
4.Add ginger-garlic paste and cook for a minute.
5.Add beef mince or mutton mince, turmeric, coriander powder, cumin powder, chili powder and cook until browned.
6.Add garam masala, chopped tomatoes, green chillies and tamarind pulp, and cook till the mixture comes together.
7.Fill the sliced bitter melon rounds with the prepared mince mixture.
8.Heat oil in a pan and then put the filled bitter melon slices in it. Cover and cook on low heat for 20-25 minutes until done.
9.Garnish with fresh coriander and serve with rice.
