Ingredients

1/4 kg okra
1 teaspoon cumin seed
5 tablespoons oil
1 teaspoon tamarind paste , without seed
salt
3/4 large onion , sliced
3 tomatoes , diced
3/4 teaspoon chili powder
1/2 teaspoon turmeric
1 green chili
1 teaspoon crushed red pepper flakes

Instructions

1.Rinse the okra and cut off the stems, then slice them vertically in half. Put them aside.
2.Heat the oil in a pan, then add cumin seeds and saute for a minute until they sputter.
3.Add onions and green chilies and stir until the onion turns golden brown.
4.Add tomatoes, salt, chili powder, and turmeric. Cook on high flame until tomatoes mix well with the onions.
5.Add tamarind paste and cook for another minute.
6.Put the sliced okra in the pan and stir gently.
7.Cover with a lid and reduce the heat to low. Cook for about 10 minutes, or until the okra is light green, and soft.
8.Remove the lid and stir in red pepper flakes. Cook on high flame for another 2 minutes. Serve hot with rice or roti.
