Chappal Kebab is a popular North Indian appetizer that originated in Peshawar, Pakistan. It got its name from the Hindi word 'chappal' that means a slipper, as the shape of kebabs resembles the shape of the shoe. The dish is also known as Peshawari Kebab or Pashtun Kebab. It is widely famous in India, Pakistan, and Iran. Chappal kebab is made from a mixture of ground meat, spices, fresh herbs, and sometimes chickpea flour or bread crumbs. The mixture is shaped into small, flat patties and then grilled or pan-fried until cooked through. It is traditionally served with green chutney, onion rings, and lemon wedges.

Instructions

1.In a small pan, dry roast cumin seeds and coriander seeds until fragrant. Grind them in a spice grinder to make a fine powder.
2.In a mixing bowl, add ground meat, chopped cilantro, chopped green chilies, chickpea flour, powdered spices, black pepper, salt, beaten egg, and vegetable oil. Mix everything gently but until well combined. Cover the bowl with plastic wrap and refrigerate for 30 minutes.
3.Preheat your grill to medium-high heat. Grease it with cooking oil.
4.Take out the meat mixture from the refrigerator. Divide it into 6-8 equal parts. Wet your palms with cold water. Take one part and make a patty with it. Flatten it to a thickness of about ½ inch. Repeat the same process with the rest of the meat mixture.
5.Place the patties on the greased grill. Close the lid. Cook the kebabs for 5-6 minutes on each side until they turn golden and crispy outside. Make sure to flip them gently with a spatula so that they don’t break apart.
