3/4 inch gingerroot , peeled and chopped

Instructions

1.Soak the black-eyed peas in water for at least 4 hours, then rinse and drain.

4.Add the chopped tomatoes to the onion mixture and cook until the tomatoes have broken down and the mixture is thick and bubbly.
5.Add the onion-tomato mixture to the pot with the black-eyed peas and mix well. Simmer for another 5-10 minutes, stirring occasionally, until the mixture is well combined and heated through. Serve hot with rice or naan bread.
