Ingredients

1/2 kg brinjals , tender , round and small ( Baingan or Eggplant )
2 medium onions
5 red chilies ( Lal Mirch )
2 tablespoons tamarind extract ( Imli )
1/2 inch ginger ( Adrak )
2 tablespoons peanuts ( Moum Phali )
2 tablespoons grated desiccated coconut ( Khopra )
1 bunch fresh coriander leaves , chopped , for garnish ( Hara Dhania )
2 tablespoons sesame seeds ( Till )
1 tablespoon coriander seed ( Cilantro or Saabut Dhania )
1 teaspoon cumin seed ( Zeera )
1 teaspoon red chili powder ( Pisi Lal Mirch )
1/2 teaspoon turmeric powder ( Haldi )
salt , to taste
4 tablespoons cooking oil
Brinjal Masla, also known as Baingan Masala or Eggplant Masala, is a popular dish in South Asian cuisine. Instructions

1.Cut the brinjals in four pieces each and sprinkle salt on them.
2.Roast the sesame seeds, coriander seeds, cumin seeds, peanuts, and dry red chilies until fragrant.
3.Grind the roasted ingredients with tamarind extract, grated coconut, ginger, and a little water to form a paste.
4.Heat oil in a pan and fry the onions until golden brown.
5.Add the ground paste, red chili powder, turmeric powder, and salt to the pan and cook for 2-3 minutes.
6.Add the brinjals to the pan and cook until soft, stirring occasionally.
7.Garnish with fresh coriander leaves and serve hot with rice or bread.
