1/2 teaspoon garam masala
1/4 teaspoon ground nutmeg
1/4 teaspoon ground mace
1/2 teaspoon dry ginger powder
2 1/2 tablespoons oil

Instructions

1.Rinse and pat dry all the vegetables. Cut the okra into 1.5 inch pieces, slice the small eggplants into rounds, cut the onions into quarters, and dice the potatoes into small cubes.
2.In a small bowl, mix together the coriander powder, salt, mango powder, cumin powder, red chile, black salt, dry mustard, garam masala, ground nutmeg, ground mace, and dry ginger powder.
3.In a large skillet over medium-high heat, heat 2 tablespoons of oil. Add the onions and cook for 2-3 minutes until translucent. Add the potatoes and cook for 5-7 minutes until lightly browned.
4.Add the remaining ½ tablespoon of oil, okra, and eggplants. Cook for another 5-7 minutes until the vegetables are browned and cooked through.
5.Sprinkle the spice mix over the vegetables and stir until well combined. Cook for another 1-2 minutes or until the spices are fragrant. Serve hot.
