Ingredients

3 tablespoons sesame oil
1 teaspoon fresh ginger , minced
2 tablespoons garlic , chopped
1 cup low sodium soy sauce
1 cup water
1 1/4 cups dark brown sugar
2 containers extra firm tofu
1/4 cup cornstarch
4 large green onions , cut into 1-2-inch slices
1 large red bell pepper , cut in to long slices lengthwise ( optional )
10 ounces mushrooms , quartered ( optional )
Pf Chang's Mongolian Beef is a popular Chinese-American dish that is known for its tender beef and sweet and savory sauce. In this vegan-vegetarian version, the traditional beef is replaced with tofu, which is coated in a crispy cornstarch coating and served with a flavorful sauce of soy sauce, ginger, garlic, and brown sugar. This dish is typically served as a main course and can be enjoyed with steamed vegetables or rice.

Instructions

1.Press the tofu between paper towels or a clean kitchen towel to remove excess water and cut into small squares.
2.In a small saucepan, heat 2 tablespoons of sesame oil over medium heat. Add minced ginger and garlic and cook for 30 seconds.
3.Add soy sauce, water, and brown sugar, bring to a boil and reduce heat to medium-low. Cook for 10-12 minutes, stirring occasionally, until the sauce has thickened.
4.In a large bowl, mix the cornstarch and tofu until evenly coated.
5.Heat the remaining sesame oil in a non-stick pan over medium heat. Add tofu to the pan and cook for 3-4 minutes until crispy and brown.
6.Add green onions, red bell pepper, and mushrooms to the pan and cook for an additional 2-3 minutes. Reduce heat and add sauce to the pan, stirring until evenly coated. Serve hot and enjoy!
