Ingredients

1 lb flank steak
1 teaspoon dry sherry
1 egg
1/4 teaspoon salt

1 tablespoon hoisin sauce
4 tablespoons dry sherry
1 teaspoon sugar
1 tablespoon sesame oil
2 tablespoons chicken stock
1/2 teaspoon cornstarch
1/4 teaspoon black pepper
1 tsb minced ginger
1/2 teaspoon minced garlic
7 scallions , cut into 1 1/2 inch pieces
2 tablespoons vegetable oil
2 cups vegetable oil

Instructions

1.Thinly slice the flank steak against the grain into bite-sized pieces.
2.In a medium bowl, whisk together the dry sherry, egg, salt, and vegetable oil.
3.Add the cornstarch and mix until the beef is well-coated.
4.In a separate bowl, whisk together the light soy sauce, dark soy sauce, hoisin sauce, 4 tablespoons of dry sherry, sugar, sesame oil, chicken stock, cornstarch, and black pepper.
5.Heat 2 tablespoons of vegetable oil in a wok over high heat.
6.Add the minced ginger and garlic, and stir fry for 10 seconds.
7.Add the beef and stir fry until browned, about 3-4 minutes.
8.Remove the beef from the wok and set aside.
9.Heat 2 cups of vegetable oil in a wok or deep fryer and heat to 375 degrees Fahrenheit.
10.Add the scallions and stir fry for 30 seconds.
11.Add the beef and sauce to the wok and stir fry for another 30 seconds until the beef is coated with the sauce and the scallions are wilted.
12.Serve hot.
