Ingredients

1 lb 93 % lean ground beef

4 garlic cloves , minced
1/4 teaspoon fresh ginger , grated
1/4 cup soy sauce
1/2 cup brown sugar
1/4 teaspoon cayenne pepper
1/2 cup green onion , chopped
2 teaspoons dry sherry or 2 teaspoons dry vermouth
2 teaspoons dry white wine
2 teaspoons white vinegar
2 teaspoons creamy peanut butter
1/4 teaspoon black pepper
2 cups cooked rice , I use jasmine

Instructions

1.Heat the sesame oil in a large skillet over medium high heat.
2.Add the ground beef and cook until browned and cooked through, breaking it up into crumbles as it cooks.
3.Add the garlic and grated ginger to the beef and cook for an additional 1-2 minutes.
4.In a small bowl, whisk together the soy sauce, brown sugar, and cayenne pepper.
5.Pour the soy sauce mixture over the beef and stir to combine.
6.Add in the chopped green onions and stir to combine.
7.In a separate bowl, whisk together the sherry or vermouth, white wine, white vinegar, peanut butter, and black pepper until smooth.
8.Pour the peanut butter mixture over the beef and stir to combine.
9.Continue cooking the beef, stirring frequently, until the sauce has thickened and the beef is well coated.
10.Serve the Mongolian beef over cooked rice and garnish with additional chopped green onions, if desired.
