Ingredients

200 g konjac
2 large potatoes
1 carrot
200 g deep fried tofu
3 tablespoons soy sauce
2 tablespoons sugar
2 tablespoons sake
1/2 cup water
Niku Jaga translates to meat and potatoes. This traditional Japanese dish is usually made with dashi sauce but can be modified to make it vegetarian. In this recipe, we have substituted meat with deep-fried tofu and konjac, which is a Japanese root vegetable. This dish is delicious and filling while also being healthy and low in calories. Instructions

1.Peel potatoes and cut into bite-sized wedges. Cut carrot into bite-sized pieces.
2.Drain the water from deep-fried tofu and cut into bite-sized pieces as well.
3.Heat a medium-sized pot on medium heat and add potatoes, carrots, konjac, deep-fried tofu, soy sauce, sugar, sake, and water. Cover with a lid and simmer until vegetables are tender (for about 20-30 minutes).
4.Serve hot and garnish with green onions if desired.
