Ingredients

2 1/4 lbs aged ground sirloin or 2 1/4 lbs ground chuck

5 tablespoons mayonnaise
3 tablespoons white miso ( shiro )
1 tablespoon honey
2 teaspoons soy sauce
1 1/2 tablespoons unseasoned rice vinegar
1 teaspoon sesame oil
salt & freshly ground black pepper
6 sesame seed-topped hamburger buns or 6 hard rolls , lightly toasted

Instructions

1.In a medium bowl, combine the pickled ginger and onions. Toss well and set aside.

3.In a separate medium bowl, mix together the mayonnaise, miso, honey, soy sauce, and rice vinegar until well combined.
4.Mix the wasabi paste into the mayo mixture and stir until evenly combined.
5.Preheat a grill over high heat. Season the ground sirloin or chuck with salt and pepper and form into 6 evenly sized patties.
6.Grill the burgers for 4-5 minutes per side, or until desired doneness is reached.
