Ingredients

3/4 lb chicken breasts or 3/4 lb chicken thigh
6 large eggs
1 green onion
2 tablespoons light soy sauce
2 tablespoons mirin
1 cup dashi
shredded nori ( optional )

Instructions

1.Preheat a pan over medium-high heat.

4.Add the chicken pieces and remaining soy sauce mixture into the pan. Cook for 5 minutes or until the chicken is golden brown.

6.Lightly beat 6 large eggs in a separate bowl and pour over the chicken and sauce.
7.Cover the pan with a lid and let cook until the eggs are set to your liking, about 5 minutes.
8.Remove from heat and top with sliced green onions and shredded nori if desired. Serve over steamed rice.
