Ingredients

1 firm tofu
250 g aubergines
3 tablespoons peanut oil
3 green chilies , deseeded and sliced
1 1/2 tablespoons light soy sauce
1 tablespoon fresh lime juice
1 teaspoon salt
1/2 teaspoon ground black pepper
2 teaspoons sugar
1 bunch fresh coriander leaves

Instructions

1.Cut the tofu into equal bite-sized pieces and fry them in a pan with 1 tablespoon of peanut oil until they're golden brown on both sides. Remove from the pan and set aside.
2.In the same pan, add 2 tablespoons of peanut oil and fry the sliced aubergines until they're tender. Add in the sliced green chilies and fry for another minute or two.
3.In a small bowl, mix together the light soy sauce, fresh lime juice, salt, black pepper, and sugar until the sugar is dissolved.
4.Add the tofu back into the pan with the aubergines and chilies. Pour the sauce over the ingredients and mix well.
5.Garnish with fresh coriander leaves before serving.
