Ingredients

2 large whole chicken legs , boned ( drumsticks with thighs attached , 7-8 ounces each )
1 teaspoon fresh ginger juice
1/2 cup sake , plus
2 tablespoons sake
1 1/2 tablespoons sugar
2 tablespoons soy sauce
1 small leek , white part only
2 cups water
6 -8 green onions
1 1/2 tablespoons cornstarch
1 tablespoon vegetable oil
Rolled Chicken and Green Onions (Toriniku Negi-Maki) is a traditional Japanese dish that is easy to make and perfect for dinner. In this recipe, chicken legs are flattened, seasoned with ginger juice, sake, sugar, soy sauce and rolled with green onions and leeks. Instructions

1.In a medium bowl, combine ginger juice, 1/2 cup sake, sugar and soy sauce. Set aside.
2.With the flat part of a knife, pound each piece of chicken slightly to flatten and stretch it.
3.Cut the leeks into 3-inch lengths and trim the roots of the green onions, keeping some of the green parts.
4.Dip the green onion and leek pieces in boiling water for about 30 seconds each.
5.Add vegetable oil to a large non-stick skillet over medium heat. Once hot, add the chicken and cook for 3-4 minutes per side.
6.Add 2 tablespoons of sake to the skillet and mix everything together, flipping the chicken a few times to make sure everything is coated.
7.Add water and the seasoning sauce to the skillet and let it simmer for about 5-10 minutes.
8.Once the sauce has thickened, add the green onions and leeks and let them cook for another minute.
9.Slice the chicken into bite-size pieces and serve with the green onion and leek sauce on top.
