Ingredients

1 lb pork , thinly sliced ( sukiyaki cut in Asian markets )
16 ounces shirataki noodles
7 -8 shiitake mushrooms
1 bunch enoki mushrooms
1 medium leek
1 napa cabbage
3 tablespoons soy sauce
3 tablespoons sugar
3 tablespoons chinese rice wine
1 cup hot water
1 packet instant dashi stock
4 eggs ( for dipping ) ( optional )
Pork Sukiyaki is a classic Japanese one-pot meal that's perfect for those cold winter nights. The dish is named sukiyaki because it is cooked in a suki (cast iron pot), and yaki means grilled or fried. The meat and vegetables are simmered in a savory broth of soy sauce, sugar, Chinese rice wine and instant dashi stock. It's so easy to make that you can have this on the table in less than 30 minutes. Get your chopsticks ready!

Instructions

1.Cut the napa cabbage into bite size pieces.
2.Slice the leek into 1 inch pieces.
3.Rinse the shirataki noodles in cold water and drain.
4.Cut off and discard the stem of the shiitake mushrooms and slice thinly.
5.Remove the roots of the enoki mushrooms and separate into small bunches.
6.In a pot, mix the soy sauce, sugar, chinese rice wine, hot water, and instant dashi stock. Bring to a boil and reduce heat.
7.Add in the pork slices and cook for 2 minutes.
8.Add in the napa cabbage, leek, shirataki noodles, and sliced shiitake mushrooms.
9.Cover and bring back to a boil then add in the enoki mushroom and cook for another minute.
10.Serve hot with a raw egg for dipping, if desired.
