Ingredients

1/2 cup ketchup
2 tablespoons soy sauce
1 tablespoon sugar
1 tablespoon mirin

1 garlic clove , minced
1 lb pork tenderloin or 1 lb pork loin , sliced 1/2 inch thick
salt , pepper to taste
1/2 cup all-purpose flour
1 egg , slightly beaten
2 tablespoons milk
1 cup panko breadcrumbs , more if needed
6 cups peanut oil
1/2 medium cabbage , thinly shredded ( green , red , or a mixture )
tomatoes , wedges ( to garnish )

Instructions

1.In a small bowl, whisk together ketchup, soy sauce, sugar, mirin, Worcestershire sauce, gingerroot and garlic.
2.Place pork slices between two pieces of plastic wrap and pound with flat side of meat mallet or rolling pin until flattened to 1/4-inch thickness. Season with salt and pepper.
3.Dredge the pork slices in flour, shake off excess flour, and then dip in egg mixture. Coat with panko breadcrumbs, pressing lightly to adhere.
4.In a large, deep heavy pot, heat oil to 350°F. Fry pork in oil, turning once, until golden brown and cooked through, 5 to 7 minutes.
5.Transfer pork to paper towels to drain oil. Cut into 1/2-inch-thick slices. Serve with shredded cabbage, tomatoes, and spicy dipping sauce.
