Ingredients

3 tablespoons soy sauce
5 tablespoons mirin
2 tablespoons sugar
1 lemon , 1/2 juiced and 1/2 sliced
9 ounces basmati rice , rinsed in cold water
4 tilapia fillets
1 1/4 in piece ginger , shredded
1 red chili pepper , deseeded and sliced
4 scallions , thinly sliced
This dish is the perfect mid-week meal that is easy to put together and packs a punch of flavor. Instructions

1.In a small bowl, combine soy sauce, mirin, sugar, and half of the lemon juice, set aside.
2.Rinse the rice in cold water and drain.
3.Place rice and 18 fluid ounces of water into a saucepan and bring to a boil.
4.Reduce heat, cover with a lid and simmer for 10 minutes.
5.Add tilapia fillets to a steamer on top of the rice, spoon over teriyaki sauce and scatter over ginger, chili pepper, and scallions.
6.Place lemon slices on top, replace the steamer lid and gently steam for 8-10 minutes until the fish is cooked through.
7.Serve the fish with steamed rice and the remaining teriyaki sauce as desired.
