1 small purple cabbage or 1 small green cabbage
2 cups carrots
1 cup scallion
1/2 cup dashi stock
1/4 cup rice vinegar
1/4 cup shoyu
1 tablespoon sugar
1 lb boneless chicken breasts or 1 lb boneless chicken thighs
2 tablespoons peanut oil
2 tablespoons shoyu
2 tablespoons rice vinegar

1/2 tablespoon wasabi ( to taste )
1 -2 tablespoon garlic , minced

Wasabi chicken rolls are a low-carb twist on the traditional sushi roll. Instructions

1.Preheat oven to 375°F.
2.In a mixing bowl, combine shredded cabbage, carrots, scallions, dashi stock, rice vinegar, shoyu, and sugar. Mix well and set aside.
3.Pound chicken breasts with a meat mallet to an even thickness.
4.In a saucepan, mix peanut oil, shoyu, rice vinegar, mirin, dashi stock, wasabi, and minced garlic. Heat over medium heat for 5 minutes to create a marinade.
5.Coat chicken breasts with the marinade and lay them flat on a baking sheet.
6.Bake the chicken for 15-20 minutes.
7.Slice the chicken breasts into thin strips.
8.Fill each cabbage leaf with a few strips of chicken and a spoonful of the vegetable mixture.
9.Fold the cabbage leaf over the filling and roll tightly to form a tight roll.
10.In a separate bowl, mix dashi stock, shoyu, rice vinegar, sugar, and chili sauce.
11.Serve the chicken rolls with the dipping sauce.
