Ingredients

1/2 cup mayonnaise
2 green onions , ends trimmed , finely chopped
2 teaspoons lime juice ( pref fresh )
1 1/2 teaspoons wasabi paste , to taste
vegetable oil , for deep frying
1 cup chilled soda water ( seltzer )
1 egg yolk
1/2 cup all-purpose flour
1/2 cup cornstarch
1 teaspoon baking soda
salt
white pepper
1 kg tiger shrimp or 1 kg other large shrimp , peeled with shells intact and deveined

Instructions

1.In a small bowl, make the wasabi mayonnaise by combining mayonnaise, green onions, lime juice and wasabi paste together.
2.In a separate bowl, combine soda water and egg yolk together.
3.In another bowl, combine flour, cornstarch, baking soda, salt, and white pepper.
4.Heat the vegetable oil in a deep fryer to 375°F.
5.Dip the shrimp in the dry mixture and then dip them into the egg and soda mixture.
6.Then dip them back into the dry mixture to coat them well.
7.Carefully put the shrimp into the hot oil and fry for 2-3 minutes or until golden brown.
8.Drain the shrimp on paper towels.
9.Serve hot with wasabi mayonnaise.
