Ingredients

1 tablespoon oil
1 lb pork butt , cut into 1/2 inch cubes
salt & freshly ground black pepper , as needed
4 medium onions , sliced thin
1 1/2 cups red wine
2 1/2 cups water or 2 1/2 cups vegetable stock
2 carrots , cut 1/2 inch cubes
2 large yukon gold potatoes , cut into 1/2 inch cubes
2 teaspoons kosher salt ( use less if you use regular salt )
1 tablespoon Tonkatsu sauce or 1 tablespoon Heinz 57 steak sauce
1 tablespoon tomato paste
1/4 cup applesauce
1 teaspoon black garlic oil ( Mayu )
1/2 cup peas
2 ounces bittersweet chocolate ( good quality )
3 tablespoons butter
1/3 cup flour
2 tablespoons curry powder ( S & B Japanese Curry Powder recommended ) or 2 tablespoons garam masala
2 teaspoons fresh ground black pepper ( more or less depending on how spicy you want it )
The Izakaya Sakura Kuro Curry, or Black Curry, is a popular Japanese dish that's often found in izakayas, or Japanese pubs. This dish gets its unique black color from the addition of Mayu or burnt garlic oil, giving it a rich and savory flavor. The curry is made with a variety of vegetables, pork, and a blend of spices that include Japanese curry powder or garam masala. This dish is typically served over a bed of rice or with bread, making it a filling and delicious meal for any occasion.

Instructions

1.Heat up the oil in a large pot or Dutch oven.
2.Season the pork butt cubes with salt and black pepper and sear them in the pot, making sure all sides are browned.
3.Remove the pork and set it aside. In the same pot, sauté the onions until they're translucent and fragrant.
4.Pour in the red wine, water or vegetable stock, and add the carrots, potatoes, kosher salt, Tonkatsu or steak sauce, tomato paste, applesauce, Mayu, and black pepper. Stir everything together.
5.Reduce to low heat and let it simmer for about 30 mins, or until the vegetables are tender.
6.Add in the peas and bittersweet chocolate, stirring until the chocolate is melted.
7.In a separate pan, make a roux by melting the butter and adding the flour and curry powder or garam masala. Cook until the mixture is fragrant, making sure not to burn it.
8.Add the roux to the pot of curry and stir until everything is well combined and the sauce thickens.
9.Serve hot with rice or bread.
