Ingredients

1/8 ounce dried fresh seaweed , see note
1 1/2 ounces enoki mushrooms
ice cube
2 spring onions
1/2 cucumber , cut lenghtways
9 ounces mixed salad greens
1 tablespoon rice vinegar
1 1/4 teaspoons salt
4 tablespoons rice vinegar
1 1/2 teaspoons toasted sesame oil
1 tablespoon shoyu
1 teaspoon dashi stock
1 inch fresh gingerroot , finely grated

Instructions

1.Soak the dried seaweed in a bowl of water for 5 minutes.
2.Remove the hard ends of the enoki mushrooms and wash them well. Soak them into ice-cold water.
3.Boil some water in a pan, and blanch the mixed salad greens for 15 seconds. Remove and rinse with cold water.
4.Cut the cucumber lengthways, remove the seeds and cut crosswise. Cut the onion finely.
5.Drain the seaweed and cut into bite-size pieces.
6.In a bowl, mix together rice vinegar, salt and sugar until dissolved. Add sesame oil and mix well. Add shoyu, dashi stock and grated ginger, whisk until well combined.
7.In a large salad bowl, mix well seaweed, enoki mushroom, onion, cucumber and mixed salad greens. Add the dressing and toss well.
