Ingredients

6 spring onions , trimmed
1 large red pepper , deseeded
1 -2 red chile , deseeded
25 g plain flour
1 teaspoon baking powder
1 teaspoon ground cumin
1 teaspoon ground coriander
salt & freshly ground black pepper
250 g firm tofu
50 g bean sprouts , lightly rinsed
1 1/2 tablespoons freshly chopped coriander
1 medium egg , beaten
600 ml peanut oil or 600 sunflower oil , for deep fryingc
6 tablespoons sweet chili sauce
1 small red chile , deseeded and chopped
6 red chilies , flowers as a decorative garnish

Instructions

1.Chop spring onions, red pepper, and red chili into small pieces.
2.In a large mixing bowl, mix together plain flour, baking powder, ground cumin, ground coriander, salt and freshly ground black pepper.
3.Crumble firm tofu into mixing bowl. Add the chopped ingredients, lightly rinsed bean sprouts, and freshly chopped coriander. Mix well.
4.Add beaten medium-sized egg to the mixture. Mix well.
5.Heat the oil in a deep frying pan. When the temperature reaches 180°C, start frying small portions of the mixture, until golden brown and cooked through.
6.Drain the fritters on a paper towel-lined plate.
7.In a small bowl, mix together sweet chili sauce and chopped red chili.
8.Serve the fritters hot with chili dipping sauce, garnished with red chili flowers.
