1 1/4 cups uncooked wild rice mix ( or can use brown rice and barley or your own mix )
4 tablespoons rice vinegar
4 garlic cloves , finely chopped
3 tablespoons toasted sesame seeds
1 tablespoon finely chopped ginger
1 tablespoon miso ( barley , or any flavor miso you have on hand )
1/8 teaspoon crushed red pepper flakes
1 cup shredded red cabbage
1 medium carrot , shredded ( about 1/3 cup )
1/4 cup thinly sliced green onion

Instructions

1.Rinse wild rice mix in a fine wire strainer and drain; set aside.
2.In a large saucepan, combine 2-1/2 cups water and rice vinegar. Add rice; bring to a boil. Reduce heat; simmer, covered, until liquid is absorbed and rice is tender, 40-45 minutes.
3.Meanwhile, in a small bowl, whisk together garlic, 2 tablespoons sesame seeds, ginger, miso, red pepper flakes and remaining water until smooth.
4.In a large bowl, combine cabbage, carrot and green onion. Stir in miso mixture.
5.When rice is done, remove from heat. Stir in cabbage mixture. Cover; let stand 10 minutes. Fluff rice with a fork. Top with remaining sesame seeds.
