Ingredients

1 lb boneless skinless chicken breast , cut into 1-inch pieces
1 large garlic clove , minced
3 tablespoons olive oil , divided
3 1/2 tablespoons honey
3 1/2 tablespoons soy sauce ( I use reduced sodium )
1/2 teaspoon salt
1/4 teaspoon pepper
1 red bell pepper , seeded , cut into 1-inch pieces
1 yellow bell pepper , seeded , cut into 1-inch pieces
1/2 yellow onion , sliced
1 large carrot , diagonally sliced , thin
2 teaspoons cornstarch
1 tablespoon cold water

Instructions

4.Remove chicken from skillet and set aside.

7.Add chicken back to the skillet and pour the honey sauce on top.
8.Cook for an additional 2-3 minutes, stirring frequently until the sauce has thickened and evenly coated all ingredients.
9.Serve hot and enjoy!
