Ingredients

2 cups sushi rice ( japanese sticky rice )
1 piece 3/4 x 3/4 inch square grouper ( approximately 8 inches long )
tempura batter
1 sheet nori ( seaweed sheets )
2 teaspoons sliced onions
1 teaspoon mayonnaise
toasted sesame seeds
oil ( for deep frying )
Tampa Sushi Rolls are a fusion dish that combines traditional sushi techniques with local seafood flavors. The grouper is lightly battered and fried to provide a crispy texture which complements the sticky rice and fresh ingredients. These rolls can be served as a lunch or dinner option and offer a creative alternative to traditional sushi rolls. Instructions

1.Rinse the sushi rice in a fine mesh strainer until the water runs clear.
2.Add the rinsed rice and 2 cups of water to a medium-sized pot and bring to a boil.
3.Once boiling, reduce the heat to low and cover. Cook for 15 minutes.
4.Remove the pot from heat and let it sit, covered, for 10-15 minutes.
5.In the meantime, cut the grouper into 1/4-inch thick slices.
6.Dip the grouper slices in the tempura batter and fry in hot oil until golden brown.
7.Once the rice is done, place it in a bowl and mix in the sliced onions and mayonnaise.
8.Lay the nori sheet onto a bamboo rolling mat and spread the seasoned rice over it.
9.Place the fried grouper slices on top of the rice and sprinkle with toasted sesame seeds.
10.Roll the sushi tightly and slice into bite-sized pieces.
